What’s a better way to celebrate than tacos at the campsite? Here are our favorite recipes!

Chicken Tacos

Ingredients:

  1. Olive oil
  2. Chicken breasts, cut into 1" strips
  3. Salt & Pepper
  4. Chili powder
  5. Garlic powder
  6. Cayenne
  7. Corn tortillas
  8. Sliced red onion
  9. Diced tomato
  10. Shredded Monterey Jack
  11. Diced avocado
  12. Sour cream
  13. Cilantro
  14. Lime wedges

How to:

  1. Get a large skillet and heat the olive oil over medium heat.
  2. Season the chicken strips with salt and pepper and add to the skillet.
  3. Sauté until almost cooked through, about 7 minutes.
  4. Add seasonings and toss to cover cover chicken.
  5. Continue cooking until chicken is fully cooked.
  6. In the tortillas layer chicken, red onion, tomato, cheese, avocado, sour cream, and cilantro.
  7. Serve with lime wedges.

Cheesy Ground Beef Tacos

Ingredients:

  1. Chopped onion
  2. Ground beef
  3. Fire-roasted tomatoes
  4. Black beans
  5. Taco Seasoning
  6. Salt
  7. Shredded cheddar
  8. Flour tortillas
  9. Sliced green onions
  10. Sour cream

How to:

  1. Cook onion until soft in a large skillet over medium heat.
  2. Add ground beef and cook until no longer pink.
  3. Add tomatoes, black beans, and taco seasoning and salt.
  4. Stir until fully mixed.
  5. Add cheese and stir until melted.
  6. Put the mixture into the flour tortillas and fold over.
  7. Top them off with green onions and sour cream.

Hot Docos

Ingredients:

  1. Olive oil
  2. Chopped onion
  3. Chili powder
  4. Salt/pepper
  5. Hot dogs
  6. Butter
  7. All-purpose flour
  8. Milk
  9. Shredded Cheddar
  10. Shredded Monterey Jack
  11. Hard taco shells
  12. Guacamole
  13. Sour cream
  14. Pickled jalapeños

How to:

  1. Heat oil in a large skillet over medium heat.
  2. Add onion and chili powder and season with salt and pepper.
  3. Cook until almost tender.
  4. Increase heat to medium-high and add hot dogs to skillet.
  5. Cook the hot dogs then remove them from heat.
  6. Make nacho cheese sauce: In a small saucepan over medium heat, melt butter. Whisk in flour and cook for about 1 minute. Stir in milk and bring to a simmer. When the milk thickens, stir in cheeses. Whisk until sauce is smooth. Season with salt and pepper.
  7. Build hot docos: Into each taco shell, add guacamole, some onions and a hot dog. Drizzle with nacho cheese sauce.
  8. Top with sour cream and jalapeños.

Buffalo Shrimp Tacos

Ingredients:

  1. Butter
  2. Hot sauce
  3. Peeled shrimp without tails
  4. Corn tortillas
  5. Shredded cabbage
  6. Diced celery
  7. Diced red onion
  8. Sour cream
  9. Crumbled blue cheese
  10. Chopped cilantro

How to:

  1. Melt butter and hot sauce in a large skillet over medium.
  2. Sauté shrimp in buffalo sauce until cooked.
  3. Soften tortillas in a non-stick skillet.
  4. Assemble tacos with layers of cabbage, celery, red onion, buffalo shrimp, sour cream and blue cheese.
  5. Drizzle with buffalo sauce and garnish with cilantro.

Steak Taco on a Stick

Ingredients:

  1. Minced garlic
  2. Chopped jalapeño
  3. Chopped fresh cilantro
  4. Cumin
  5. Lime juice
  6. Vegetable oil
  7. Salt
  8. Sirloin steak, cut into 1" pieces
  9. Avocado, cut into chunks
  10. Corn, sliced into 1" thick pieces
  11. Red onion, cut into 1" pieces
  12. Flour tortillas, cut into triangles
  13. Hot sauce
  14. Lime wedges

How to:

  1. Make marinade: In a medium bowl whisk together garlic, jalapeño, cilantro, cumin, lime juice, and vegetable oil and season with salt.
  2. Set half the marinade aside and add steak to half. Toss until coated.
  3. In a large bowl, add avocado, corn, red onion, and tortillas and toss with remaining marinade.
  4. Heat grill to high. Skewer kebabs and grill 8 minutes.
  5. Serve with hot sauce and squeeze with lime.
